Last three years I owned my 69 Bee I never put a wrench to it. Didn't need to. So why WOULDN'T I want to put one back the way it came. Maybe the problem is YOU can't put one back and have it be a reliable car. Kinda like a guy here who has been racing all his life and refused to believe my Challenger could run as fast as it did STOCK. At least he didn't believe it till he saw the recap in the magazines. So the issue wasn't "I" couldn't go that fast with my Challenger "stock". The issue was "HE" couldn't go that fast with a "stock" car. I know a many Orignail owners of there cars and they almost all say the quality control back in the day was nearly zero. Some cases, just down right unbelieveable. To long bolts in the intakes with stacks off washers, Ignitions that never worked right, very unbalanced engines, second rate tires slapped on and unbalanced, missing parts. We reused the 5.0 TPI but with larger injectors/throttle body and had a new chip made to work with the 383 and its fairly rowdy camshaft. I'm no pro when it comes to these things but do have some obviously recent experience, which included tracking down all of the needed info on the web. Let me know if I can be of assistance. The gauges in 87-88 Mark VII, Tbird/Cougar, and (probably) Mustang will read incorrectly with age. This manifests itself when the headlights are turned on. So during the rebuild that piece is removed and the mounting surface is milled back flat. This in turn "raises" the starter bendix relative to the flywheel, which in turn makes it squeel like a bunch of cats trapped in cages while being run over by a steamroller. Thus, the need for shims.
