Thermostat - 180, 190, or 195 on new motor/

So, got the motor back today, and went to get a thermostat, and they wanted to sell me a 195, but I swear the service manual spec is for a 180, but cant seem to find it again. Now the motor, 340 with 28" rad, has been built up a bit, so should I run it a bit hotter? Anyone?
 
the original was likely 195 for all round use as in winter as well

for summer use I will run a 180 in my 400 when I put it back together

Well, I reminded him when I picked up the motor that what was on it was not what I gave him. So, not really much I can do, so pick your battles right. Still chaps my *** that he didn't even want to take any responsibility, said it was my issue not his.

So moving on, the good news is the motor is 340HP and 385 torque!
 
Should be 26". 180 Superstat from Napa. Shroud. Green coolant.
