340 or 360?

I would go with a "newer 1990s era" fuel injected 360 magnum out of a wrecked dodge truck, maybe moving toward the super charger approach. I believe you would have a somewhat un-streetable combination to make enough power and torque to push a 3800+ pound car with a standard natural aspirated small block. If you went with the N/A 360, I would definitely look into stroker kits. Whatever road you may go on, good luck and hopefully your build turns out well!

I have no idea how you come up with such a statement. Figure that my 3650 or so '73 4spd Cuda with a 360, me at 180lbs and a full tank of gas can go run mid 12's in the summer heat all day long and still use it for daily driver and to and from work with NO driveabilty issue's at all. Tame enuff for the wife to drive it without complaint.

Clearly you under est. a small block.

However, I do like the idea of a supercharged stroker. More the merry IMO!
 
Maybe if you want sub 10-sec quarter mi ETs... not everyone does.
For every high dollar NSS or FAST car (or whatever) tearing up the tracks at national events and getting magazine coverage, theres thousands of guys at hundreds of local tracks turning 8 and 9 second 1/8s and/or 13 or 14 sec 1/4s. Some (gasp) bracket race and some (double-gasp) don't want to race at all. There's also other forms of competition that don't require a blown, stroked engine. Auto cross and road racing to name two.
A 400-425 HP small block ain't all that hard to screw together, makes more power than all but the very top tier of "real musclecars", and can do it with a hydraulic cam and power brakes. All VERY steeetable and civilized.
