68 Charger Vin

If you purchased the cars in Alberta, I assume they were never registered in Ontario, so unfortunately, the MTO office is not going to be much help with tracing the original VIN number. However, it wouldn't hurt to use Dadsbee's suggested approach to give you an idea where you stand. You may have to reach out to the Alberta version of the MTO if that is where the vehicles were last registered.
Good point but what kind of information could I give them that would allow them to search for it? I always thought they needed the vin to do anything.

Just my opinion.

If both bodies are in about the same shape just register the 318 car and put any drivetrain in it you want. It will never be a numbers matching car but neither would 383 car plus the 383 car wold have a state issued VIN. While I’d be ok with a car with a motor swap I’d never get involved with a car with a State issued VIN.
Unfortunately the 318 car is very badly rusted (Flintstones Car), the 383 car is quite solid but is just a shell.

Yes, you only need a bill of sale here. I sold a Challenger to Quebec though and he needed a pink card to get it legal back there. I simply registered the car in my name under my vintage tag, sold it to him, and he got a vintage plate and registered it in his name. He had to supply an Alberta address to get the tag. That car was still in the system, so it was an easy process. This is semi but not fully related to your scenario. Where did you get this car? Granum? There is a chance that dash is still around somewhere. However slight. But if it was the Granum cars, it would be unlikely.
I picked them up near Edmonton back in 2021 IIRC. How do you mean "your vintage tag" I'm not quite sure I understand haha

That's a good point, I forgot you could do a title search. Although I doubt it would be in the system, how would I guess the original vin? Apart from it being XP29G8B, I'm not sure what I'd say. (Also I'm assuming it would be a "B" as it was an export car for Canada and I remember hearing somewhere that all export cars were built at Hamtramck. Although I'm not %100 on that).
Without a build sheet and no other information you are pretty much screwed. You could try googling the SO numbers. Car could of been originally sold in the US as well. Who knows. The car is nothing special. You have no matching drive train. To me its getting to a point that its not worth the time. That dash is missing for a reason and that VIN may be in use. I would build it off the other car. Who cares at this point if it was born as a 318.

Yeah I was really hoping to find a build sheet but knew the chances were next to zero given the state the car was in. I do still have the Fender tag which shows the car was built for export to Canada though. This may be a stupid question but what are "SO numbers"?

I guess one of my gripes with using the 318s vin (among many) would be that the fender tag would say 383 but the vin would say 318...

SO= Sales Order. These would be on the bottom of the fender tag, core support, truck rail.

If you are going to build the car your way who gives a rip about a fender tag. Leave it off.

Also, I have a 68 2BBL 383 with a 727 which were cast within like 2 months of the car's build date which I think would be the next best thing to #matching. (not that a 2BBL 383 is anything special like you said).
