what size holly?

If you take a Holley off a storage shelf and did not do its yearly rebuild you will fail.
Also a DP can be run on the street without ill effects or poor gas mileage.
Repair and tune what you have and after it is working then decide what needs upgrade.
With todays poor quality pump gas, problems will happen, sticking needles and seats or clogged passages.

So....what is the manifold vacuum reading at idle? And what is the power valve rating in the carburetor? If the engine is flooding at idle and it only pulls 6" of vacuum perhaps there is a 6.5 or 8.5" power valve opening. If you shine a flash light down the primary barrels of the carburetor while it is idling you should not see any fuel dripping from the boosters. If there is fuel dripping from the boosters you need to figure that out. Most Holley carbs come with 6.5 or 4.5 PV's. Most trick kits come with 6.5's and I have seen this cause problems for people who unknowingly put a 6.5' in place of a 4.5".

Thanks for the info. The more I read and think about it. I'm leaning to rebuilding my old cab

Make sure you figure out the problem with the carb before you remove it from the engine. You are on the right track!
