Just put on some add-a-leafs to make room for the MT 295/65-15s. 215/70-15 Redlines up front as well. What do you guys think?

Looks nice setting there. Any clearance allowances for uneven surfaces and suspension bounce?
 
Not sure if same fender well sizes as a '68, but my '69 Bee has 15x10x5.5 offset wheels in the back with 295 rubber. Also, with a 10" wheel you'll get rid of that side wall ballooning you have now.

Diamondback tire carries a Nitto 295 Redline "slick". Think I might get that for my rear as my current Red Lines can't handle the 440 HP.
 
I have always evaluated tire width this way.
Unmount sitting on flat tread, wheel width should be no less than bead width and no greater than tread width. Anything between is game.
