I am going to change the oil in my 1969 Coronet Super Bee 383 cid and forget how much oil it takes. Does anyone know the oil capacity? It is a four speed manual and I do not have access to the oil pan, but I assume it is a standard pan.

5qts sounds about right. (4.7 liter)
I just did an oil change and drained the old oil in a 5 liter drum which was almost full.
 
5 should be right. But to be safe put in 4, let it settle then add until it's where you want it. Check it again after first start-up.
 
Keep in mind the oil filter capacity.
With the filter in horizontal position there is not much use of pre-filling the filter with oil prior to installing.
I just crank the engine without starting until i see i am getting oil pressure. Double tap on the trottle to fire it up
