I'm in the market to redo my old torn up rear seats but rather than spend time and money to reupholster em, what if I just removed em entirely? I'm sure there's some type of delete kit, or maybe you guys just added carpet all up in there?

My butt ugly self isn't going to be getting any back seat action anyways. It would also be nice to shave off a little weight as I'm not a fan of getting spanked by those modern over engineered 4 cylinder sport sedans. (I'm running a tired old LA360)

Seats weigh "maybe" 50 pounds total ?? Carpet maybe 15 ? So your gain is 35 pounds from a place that actually needs the weight.

Years ago I had a friend who was the first to own a car. Every time we went somewhere he always had his hand out for gas money. Another friend and I made a pact - we would never charge each other for gas. I bought my RR and we tooled around all over the place - on my dime. Two years later he bought his 'cuda and the first thing he did was take out the rear seats and carpet the area. His excuse was "to save weight"!! To this day he's still so tight he squeeks !!

I put a roll bar thru the rear seatback area, so the seat had to go. The bars went just above the v shaped brace, thru a 1/16 aluminum panel required by nhra if the battery is in the trunk. Then carpet, from the back window , over the panel, cover the floor to the firewall.
I used the cheapest, thinest, lightest indoor/outdoor i could find. I think i got it from home depot. This was more than ten years ago, and i haven't seen it in the store in years.
If memory serves( and it frequently doesn't) total carpet weight was under ten pounds, with fiberglass buckets replacing the front bench, and back seat delete, i think i broke even on the weight of the bar.
I can post some pictures, but not till monday, i'm away from the car at the moment.

I can still put my seats back in anytime, rear shelf and trunk divider are now food grade stainless steel (vehicle can later be re-cycled into a kitchen sink).

Aluminum panels on package shelf and back seat filler, back panel spatter painted on trunk side, indoor-outdoor covering panels and floor.

In my 65, I went with the A990 super stock interior with the rear seat delete. I used the delete kit and upholstered it to match the rest of the interior. I also have an aluminum trunk divider or bulkhead.
