Anyone have any recommendation's for interior sheet metal patch panels. And also any recommended carpet kit's. Thank you.

Without knowing which specific interior sheet metal you are wanting, it is hard to say. As a general rule, I typically suggest AMD. I bought an AWFUL lot of their sheet metal and didn't have many issues. I think they are about the best option out there!

I can't speak much to carpet. I know you have a LOT of carpet in those 66 - 67 Chargers. My only experience is ordering my carpet for my '69 Charger. I went with Legendary.
 
All of the carpet that is now molded comes from ACC Carpets. My one suggestion is to purchase the carpet just before you need it. Some of the larger retailers have the carpet in stock and it may have been sitting on the shelf for months. Other retailers will drop ship directly from ACC and that gives you a fresh carpet that is cut and molded once ACC gets the order. I have found that these carpet sets will require much less work when it comes to installing. Also, consider the mass backing as it makes the carpet lay better and helps in insulating the interior for noise and heat.
 
I bought mine from www.stockinteriors.com
They sell ACC carpet and it fit fairly well with the exception of a small place near the back seat but we were able to make it work
BTW The mass backing is worth it but it did make it a little harder to install

In the back of your car --- did you put the carpeted side panels in first before putting the interior carpeted floor pan in?

Yes,
The sail panels go in first
Don't forget the cardboard sheet that goes under the carpet or the "wells" in the floor pan will be visible
I also used sound deadener on and under the floor pan
