Did the rear view mirror on a 68 Charger have sort of a tapered squarish stem or a round stem? Was 68-70 all the same?
Also, did the side view mirror have a Penta-star logo on the back of it?
 
Round stem. 69-70 am not sure. If you are referring to the mirror frame those on my 68 do not have a Penta-star on the chrome. I think there is something on the mirror face its self but would have to check to verify that.

The logo is in the chrome on the back of the mirror frame, not on the base. I don't know if this is the same as original or a reproduction thing.
 
The original manual mirrors had the Pentastar logo cast into the back side of the mirror. The better quality reproduction mirrors are available with the logo cast into the mirror, but the originals / NOS mirrors has a more defined logo as compared to the reproductions.

There is a much cheaper variety of the same mirror without the Pentastar logo that is available as well.

For the interior mirror, the round stem is more common in 68 and by 69 and 70, the square stem was more common. I have seen some of the round style still used up to 70 in the lower trim equipped cars. Not sure of the logic and may be with what was available based on vendor.
