You know how I respect you, I consider you a friend my fellow mopar brothers here but those dishes although looks very good looks more like tex- mex cuisine, for a good posole you need an special type of corn ( cacahuazintle) and almost every state has his own particular way to made the broth for an example where I grew up ( colima) we eat it almost dry we call it dry pozole , you can eat it red, white, green, posole, with chicken, pork, Turkey, lettuce, lime,delicious let me tell you

Now, the carnitas, you touch a nerve there bro since I live in the world capital of the carnitas, and believe it or not some use coke here to cook them and the pork meat is fried in a ridiculous amount of lard if you have a fond for food like me and I know you are you gonna love it every Sunday I sneak from my wife to eat a few tacos of carnitas.
The carnitas are not so hard to make although require time,Please share some traditional recipes.
You are always welcome in my house my friendI'm coming to visit my friend. Between Carnitas and your niece, I may never leave.
