You know how I respect you, I consider you and friend my fellow mopar brothers here too, but, those dishes, although looks very good looks more like tex- mex cuisine, for a good posole you need an special type of corn ( cacahuazintle) and almost every state has his own particular way to made the broth for an example where I grew up ( colima) we eat it almost dry we call it dry pozole , you can eat it red, white, green, posole, with chicken, pork, Turkey, lettuce, lime,delicious let me tell you

Now, the carnitas, you touch a nerve there bro since I live in the world capital of the carnitas, and believe it or not some use coke here to cook them and the pork meat is fried in a ridiculous amount of lard:lol: if you have a fond for food like me and I know you are you gonna love it every Sunday I sneak from my wife to eat a few tacos of carnitas.:lol:

My mexi-cat is doing very well here. Actually wants to go outside (it’s-34C) but I think it’s because she thinks snow drifts are sand dunes.
 
:lol: that looks really good Paul, man I really have to invite you to zihuatanejo when things calm down and you have time, ( my wife have a house there) then go to the local market to eat some good enchiladas, chilaquiles, pozole, carnitas, tacos de cabeza, tacos al pastor, i know you have the food as a weak spot, me too... bro:drinks:
 
Don’t forget churros. We got some from an old lady that makes them with her granddaughter on a little stand she pushes around with a bicycle. I didn’t know what churros were about until we tried real, old fashioned churros. I could eat just those, all day, everyday, until I die. But then I’d miss out on all the other great food.
