My weekend project is to replace the speedo gear to get my speedometer to (finally) start reading properly. When I remove the existing unit, how much (if any) fluid should I expect to lose? 727 tranny.

A colossal pile, over a quart. Jack up the left side of the car as much as you can, or have a catch pan and rags ready.

Good time to change both seals also. pinion and housing. Easy

yo0u just changing the one on the adapter or the one on the shaft (which should not be necessary)
use good jackstands

Jack it up high in the back, safe jack stands, little or no fluid loss. The speedo pinion housing should be fine. Check it by hand with the new pinion. The O rings seem to hold up well for me. If it takes TOO much effort to pull out, a new O ring should be tried. BTW don't trust the color codes, count the teeth.

Weekend project ? 1/2" socket and 1 minute, done ! I did mine without raising the car, honestly don't remember losing that much fluid at all ....

Start the car and let it run with the transmission in neutral for a few minutes before you pop the speedo housing out, that way the converter will be full and there will be less fluid in the transmission case to spill out.
