Well.. LOL.... If you can do your own machining cutting the deck might be cheaper but if your paying a machine shop to deck the engine then new pistons vs machining starts looking like a wash...

I point above is decking the block creates more issues that need to be considered... (Back to over thinking stuff)
 
Can’t say that I have done something exactly like your talking. The head gasket thickness is a pretty small percentage of the uncompressed volume, the thin gasket even if it was a good idea, would not make much of a dent the moving the SR up.

I would want the extra overlap and lift of the 703. That is a big cavern that needs scavaging. Really needs a solid cam with some shorter seat timing to build compression and utilize the heads. Most of the HFT’s are going to leave a lot on the table. But depending on what your expectations are, that might be fine..
 
Have you compared costs, decking the block, heads, intake, verses bore job & pistons? Machine work isn't cheap. I have to believe that machine work would be in the 500 range. Before I did anything that's what I would research, then you can settle on a cam.

If your cylinders are good hone them and throw in a set of these, 1.969 compression height flattop
 
That compression height should put you at 9-9.25 with a 75 c head, with that and aluminum heads you'd be able to run 88-89 octane I would think.

ASSEMBLY
So I just pulled up the first shop that I found prices. to mill intake, heads & deck block would be $460 Pistons above & bore & hone job 675, if you can use std bore pistons then 525. Just food for thought. Prices will vary by area.
