I have a 64 Plymouth Belvedere Max Wedge clone.... 496 stroker. What I would like to do either swap out my gas tank to a tank that has the pump in-tank or get a drop in electric pump/sending unit that doesn't require stock tank modification. May go EFI in the future.

EFI will need a much higher fuel pressure than a carb. And putting in a efi pump now you will end up returning way to much fuel which only heats it up , and loose power ....
 
All efi tanks I've seen have internal baffling so the pump doesn't uncover. Not sure how critical this is.

Holley has the 255lph in tank pump but nothing 64 Plymouth (68-70 B body). Could be made to work.

It is critical ..., you gonna lean out . Under full throttle... thats no good !
It really important to have a good fuel pump with efi. Bigger isn’t always better . There are some good tools out there online to calculate hoe much fuel(pump)you need . And if you gonna run E85 or not!
