Home made Italian Cream Cake...mmmm, cake!

Home made by a local lady, purchased at the recent annual Ice Cream Social. I'd never heard of this cake until I started attending this event and the woman who baked this is the Queen of Italian Cream Cake! Now I'm hooked! Home made ice cream too!

To be honest, I haven't had any. I KNOW this ladies cakes are fantastic so I managed to get them to sell me the whole thing. The way it works, see, is there are DOZENS of home made cakes and gallons of home made ice cream. They lay out about 8 - 10 different cakes and you buy a slice of whatever you want. When a cake is sold out they bring out another one. So I was in search of chocolate and Devil's food cake, and tried some others as well. There was an absolutely fabulous Red Velvet layer cake I tried as well as a rich yellow cake with caramel icing, a chocolate cake with peanut butter icing, something I'd never heard of: Cinnamon Roll cake - that was awesome! There really aren't any duds, just cakes I prefer over others. I have limited space in my freezer so had to stay on a mission.
I put the piece that's cut out in the fridge and the rest was carefully sliced and layered with wax paper and stored in an airtight container that went in the freezer...for later. There were definitely people there who could have packed that away and more. I had three pieces of cake and that was plenty! I had to test them...:D
 
Looks dam good ! Ask her to make you a cannoli cake. You would love that to. Just some advice from a American with Italian blood in him. When I lived near Chicago we had a place called the Italian bakery in Addison , that was the only way I would be able to get great stuff like that.

I'll see if I can get one for you. I used to do cake decorating professionally and decided that is for crazy people. If you know anything about baking, you'll notice the woman who made this cake really knows her stuff. All the layers are nice and even because she cut the top even with the sides after baking. It may not be obvious but she baked it just right so that the cake is moist not dried out. It's heavy but not bulky, great texture. The icing is perfect cream cheese icing, it didn't get squished out the sides. She's consistent, her cakes are as near perfect as possible every time.

I've never made this cake and why bother when I can buy hers? I don't cook a lot anymore - rather work on cars.....:D The art of making food is all too often taken for granted. A lot of work and then it's gone!

Chances are you'll hate my guts if you get a cake like Ms. Judy's! I remember the first time I had scones with Devon cream...luckily I'm relatively disciplined or I'd be way too heavy!

Yep, my mother used to cook just about everything we had. It's weird to think that it was a "treat" to have TV dinners on Fri night and now prefab food is all most people eat.
Was that a chocolate brownie or was it like a Blondie?

Can't wait - I have one cheat day a week and that's tomorrow so I'll be eating Italian Cream Cake! I also bought four slices of another lady's to die for deep chocolate cake with superb chocolate sour cream icing...

One of Grandma Lilly’s Secrets Was Bringing The Raisins To a Boil , Then Turning off the Stove & Letting The Raisins Cool off .
Then Used The Raisin Water & Raisins in the mix … My mom couldn’t duplicate it !

Isn’t is amazing how we recall simple stuff that made us happy as kids …
