What should my restaurant make for my dinner?

Try to substitute the pork for one of the other meats. The Achiote/Annato seeds may be a challenge to find. Look for Mexican specialty suppliers. There is paste and powder, which I had to try here as thats all I could find, but grinding the seeds is better. I load up on them when we get back to San Diego area. The Tequila evaporates off with the cooking heat.

If you don't mind me asking, what is the average wage for a cook there? Here in Ontario Canada the average is between $17-$20/hr. A certified chef in a nice restaurant is around $25/hr average. Even at those wages they are hard to find. They can easily get a job at similar pay doing less greasy/hot work.

Wages for average people are low here, most of us wage by monthly, so I offer high wages, 10 thousand dirhams a month for each and every worker there. That’s a very good wage considering most get paid 2000-3000 dirhams a month which is just enough for food and a single room per month.

i haven’t thought about substituting pork products, I may try to look for some suppliers

we do have 2 arabic chefs and 1 Philippino chef along with another Philippino helper in the kitchen, he doesn’t have enough experience to become a chef but he’s learning and we have 4 Philippino servers, so food wise we do serve arabic food but it’s mainly Philippino food that we serve, I’m buying my chef a brand new carbon wok so he can make some more varieties of food[/QUOTE]

That's around 2500 a month U.S. Heck, I could live a lot better with that......

Here things are cheap, for an example an average meal is 5 dirhams, and average rent is around 1000-1500 dirhams a month if you have a family but if you live alone and you only want one room it’s around 5-700 dirhams. 10 thousand dirham per month wage is hard to find, most wages are 2500 a month for restaurants etc

Smoked Carnitas Tacos. Serve with onion, cilantro, and a squeeze of lime, on a corn tortilla.

Here’s the recipe:

Pork Roast 6-8lbs

Marinade - 24hrs
2 tbsp oil
1 Tbsp Salt
2 limes
1 orange
Oil then salt roast
Half limes/orange and squeeze juice over roast
Leave remaining fruit in tray with roast
Refrigerate


Seasoning -
1 Tbsp brown sugar
2 tsp kosher salt
2 tsp coarse ground black pepper
1 tsp chili powder
1 tsp garlic powder
1 tsp onion powder
1/2 tsp cumin
1/2 tsp Mexican oregano
1/2 tsp cinnamon
1/2 tsp ground chipotle peppers

Season pork and smoke at 275 for 5 hours.

Brazing Pork
Place pork in aluminum pan
Drizzle 1/2 cup oil over roast
Add 2 bay leaves to top
Cover and bake at 350 for 2-3 hrs
Target temp 200-203 degrees

Rest then pull pork
Crisp pork on flat top using juices

Tuna Melt with grilled peppers & onion.
MUST start with fresh fish!
Offer a few different cheeses & variety of peppers (heat range from sweet to scalding).
& have the cook keep a close watch on them on the grill.

How about beer can chicken?

I make this often. Take a can of beer, remove half (bonus, you can drink it while cooking - a free extra!). Cut a few extra holes in the top of the can as well. For the chicken, put your favorite rub on it. Use whatever you like. Then put the can up into the cavity of the chicken, stand the chicken on the grill with the can and legs like a tripod, and cook over indirect heat from a grill with the lid on. The chicken comes out perfect! Super juicy on the inside, and crisp everywhere on the outside.

I love a huge gyro with moist, tender lamb!
Light on the cucumber sauce(most gyro places here smother it w/sauce and it becomes a mess & ruins it for me).

we also do an Oyster stuffing (lots of Oysters) also in a separate pot
with a hint of mint for a nice tang, add some really great flavor,
lots of onions, peppers, celery, mushrooms & olives
lots of sausage in it thou, could substitute the gizzards, liver & heart
for the sausage I assume
