The "ecu" for the Sniper is inside the front bowl of the unit. Your "high voltage" coil is inches away. Personally, I wouldn't like that. Also, coils are susceptible to fail from heat and vibration. Thus one of the reasons we try to get all that stuff off the motor.
If using the wizard and not a specific "tune", I believe the initial setup can affect idle as well. I redid mine in the beginning and went back to "Stock Cam" in the settings. It ran/idled much better. The small block has around a .490 cam in it for reference. Guessing it has to do with vacuum...
Didn't watch that video but have you tried the "duct tape" method to set the IAC? Worked great for me. Basically you cover the iac port with duct tape, start up and adjust idle to 50rpm to below the idle rpm you want. Shut down. Remove the tape and restart. Idle will go up into the range you...
This is one of the "shields" I mentioned. Notice the ford in the pic. More of an issue typically for those guys. May/may not help.

The fords seem to have alot of problems with emi and the Snipers. I assume it has to do with the fact that the cap is close to the front mounted ecu on the sniper. If you cover the cap with a couple layers of tinfoil does it settle down? Just for a test. If so, some have made a "shield" that...
I wonder why there'd ever be a need for a "real" weapon on set. Wouldn't a gun with the pin removed serve same purpose and remove all the danger? Seems silly this is even an issue today.
RockAuto is great for seeing what stock parts look like. I do believe the balancer with the "trough" is correct for an externally (stock) balanced 360.

Have it magged before buying a single thing. Just in case it's got a crack. I'm on block three and still not out of the machine shop yet on my 400/470 build. Just painful.
440 Source kit is great for the street/strip style build. My only issue so far is the "balancing". Next time I'd have my shop do the balance work instead of Source. Otherwise good deal. If not, it would be a Molnar crank for me.
