It is BS to say Carters are sensitive tio fuel pressure. I have run 9 psi at the strip as means of enrichening the mixture, no problems at all. Chart below comes from Carter as you can see: 10 psi. As with any carb, the float level should be set according to the fuel pressure. My loooong...

If you don't mind 295/50s, there are several brands with white letters. Milestar, Venom, Cooper Cobra (would be my choice) BFG, Gripmax, Futura (Cooper brand). Not sure about 295 60 or 65s with white letters. Edit: looks like 295/65s are only available as drag radials, without white letters...

My understanding is mechanical fuel pumps create pressure spikes and pulsations, so liquid filled gauges are preferred to dampen those signals when installed on a motor. There are also the vibrations of the motor itself when a gauge is connected to it...such as being ported off a fuel line...But...
