You can access every bolt to get the bumper off. I usually drop the valance out just to have better access and get it out of the way of being scratched. That's just another 10 bolts or so.

This is a mixed bag of symptoms and it is confusing as to what is really going on. A car wont overheat in 30-40 seconds, so I assume this was an issue before it had the no-run problem. Same for the oil usage. Perhaps you could clarify the timeline.

I would not stroke it if it is a numbers matching car with that low of mileage. My reasoning is to preserve the car's originality and value, and you are not racing or really driving it anyway so .......why?! If you just gotta do it, then set the number's matching stuff aside and go to town on...

It's a pain to do every car. I use a spinner trap for use with 5-gallon buckets (see eBay) in both the shop and house garage. They work great. Just throw out the mice and reload with peanut butter every month.
$2500 in trade value for that is a good deal even if it is just a Satty, ....just go in eyes wide open that there is a lot of rust under that bubbling paint. Heck, if you can get that 318 running you could flip it for 2x - 3x as-is.

Yes, dumping some gas down the carb adds the fuel it has been lacking under those conditions, and meanwhile temps come down and pressure lock may leak down. However, the run problem would soon return.
Since it comes on over time, I would not look at the pickup or fuel pump first. First I would look at pressure lock or vapor lock, both of which would come on after run time had passed.
