If it has to be recessed the tire will probably rub/interfere if running a large enough tire, which I am assuming that is what the o.p. wants since he is wanting to mini-tub.
I have never mini-tubbed a convertible myself. However, won't the wider inner wheel wells not allow the top to retract down into the trunk well as needed?

No, RC don't do it. The roof line is one of the characteristics that make these cars perfect as is. There are already enough ruined with these high dollar custom jobs, destroyed in all the movies and cloned into General Lee's.
I would just Re-drill the axle flanges to the 5x4-1/2" pattern. While you are at it drill for 5/8" dia studs depending how much power you plan on adding.

Ice chest is for my Cool Shirt fire suit for the track and used for water, pop, beer for the cruise nights and car shows. Cage/car is certed for 7:50's. Yes, it's needed.
You guys have done some nice work with some of your custom seats. I had custom covers made for my Kirley aluminum racing seats. Surprisingly, they are quite comfortable even on street driving trips. Still have the rear seat even with the cage going through the rear seat bottom.
