You can measure the lift with a dial indicator off the lifter. Heads are hard to tell until off apart on the bench. I would think that valves, seats, and guides most likely will be needed. Mag first to make sure there are no cracks.

Big block trucks had them. but 78 was the last year. Lots of 3/4 ton used them and I think up to 93 will fit. The master might have to be changed also depending on yow it bolts to the booster
Valve cover will not come off with a big block and that booster. The booster is the wrong one for a big block. You would need the smaller diameter tandem booster.
Run a leak down test. You could also pull the valve covers and inspect the valve train. If compression was ok I would be looking at the cap as 3 and 6 are next to each other.
If you are sure that both halves of the master have let all the air out you should of bled it ok. On the car or bench will not matter as long as you fully stroked the master to get all air out. You might be on the right track that the master has failed and needs replacement. Get a new master and...
Did you actually bleed the master with tubes going back into the fluid? Did you verify the caliper bleeders are on top? Did you make sure the rear shoes are properly adjusted? You ask questions but give no answers.
I see that now. Guys make the newer fit the older by methods I would not use. Looks like they may work but you have to use the newer control arms. Check with @mobileparts to see what he can supply.
