I am thinking about pulling out the 361 that is currently in the car and putting in a 440, But I don't how the suspension will hold up since it is stock. Any thoughts?

I don't think you will be adding more than 100 pounds overall, probably not that much. If your suspension is in good shape now, I see no problem.

I did a 383 to 440 in the 67 coronet. No issues at all

This is how hotrodding works.

The 440 in my 66 went in on slant six torsion bars.

Considering block, crank, rods, pistons, intake manifold - I'd bet the weight difference is about 50#, maybe a little less. Depending on the use of the vehicle & any other power additions (cam, intake & carb, exhaust) may consider different leaf springs.

If you're "building" the 440, aluminum heads, intake n water pump/housing will make a 440 weigh a touch less than a completely stock 360.
