This may be a dumb question, but trying to clean up a stock engine and pull off parts I know I won’t need and just take up space and create weight like the power steering pump and hoses, heater hoses, etc.

Does anyone make some decent looking caps to cover up inlets and outlets left behind? Just looking for something black to blend in and right now I’m just using an old piece of heater hose to cycle the coolant at the water pump hosing.

Take out the heater hose nipples and put in pipe plugs, doesn't have to be looped.

As far as your power steering gearbox, every time you turn it will move fluid, the hose need to be hooked up. And you may cause damage running it dry.
