Hood latches - finish

I have soaked mine in evapo-rust and ready to finish. I see moparnation had them refinished.
Thinking I'll just finish then myself.
Can I remove and replace the pins or should a just phosphate the whole thing and not worry about it?

Plan to use zinc phosphate. Correct?
Is there a difference between zinc phosphate and black phosphate?

If you have not done the latch, catch, release and spring yet.... I have a pretty good process. I would not zinc or black phosphate them. Bolts are indeed black phosphate. PM me for more info. Joe
