Any one can build a chevy or ford.
I had all my short block work done at a shop that just dose MOPAR.

You could call Shady Notch Dodge and Chrysler salvage (405-769-3377) and they might be able to give you a few suggestions.

Texas Thunder Performance in Frisco. Not real close to you but they know what's going on. They build race cars from the ground up. A top notch race engine shop is DiamondBack in Houston. All the guys at TTP knows Damon at DB and knows what kind of work he does....and he is now the sole owner of the shop. http://www.diamondbackengines.com/
