looking to get smarter on identifying these cars - question. We’re power accessories like steering and brakes ever coded on the car, or did they only appear on paper documents?

Ok thanks, car was built in Missouri and the Disc Brakes (power) are listed separately. So it’s possible the power steering was original but not listed on the fender tag? What, when and how things were coded varies by plant. You'll have to be more specific as to plant.
Generally, PS is not coded as a stand-alone option. PB might be.
