What shops do this, or a lead on where to get it done? I read nitrogen is better than water because it keeps the inside free of moisture.

anyone that tests with water stay away from
any shop that does AC repairs will be able to do it
 
The two shops in Tucson that specialize in "auto refrigeration" test all systems with a nitrogen charge plus dye before refrigerant is charged. Try a shop that does only auto AC.
 
Make sure that they evac to the min of 500 microns and hold that for the min of 30 minutes that way you know its clean of any type of water dirt etc and its sealed correctly.
