How do you pick the size turbo for a motor and run carbs, I would like to run twin turbos and carbs(edelbrock if possible)?

To pick the turbo size, I would advise you to call a company like Precision Turbo and tell them about you combo and intended usage. They can recommend a set for you. As for running Edelbrocks with them, I would say to forget that idea unless you're very experienced with those carbs and blow through forced induction systems. If that were the case, you probably wouldn't be here asking.
I would recommend the FItech EFI which can be configured for a dual quad blow through application. It's also self learning making the tuning much easier.
 
Blow thru carbs are all generally holley 4150 style carbs. They can be modified, or you can buy them set up for your application, or send yours in to be modified. One disadvantage I have found in my set-up with a carb is after turning the motor off, the heat soak evaps some of the fuel in the bowls and fills my intake plumbing with fuel vapours, so when I go to start the car up again after 15 minutes of sitting, I need to crank the engine over for 6-7 seconds to cycle in fresh air into the engine. Better heat shielding to the carb may help with this, but I am maxed out for hood clearance. I am working on a little air pump, solenoid and a timer to vent my intake.

Garret and borg warner have good info and websites to help pick a turbo. What I have learned though is that the turbine side is more important to get right, and all the turbo fit programs completely ignore the turbine side, that’s where a call to a manufacturer or looking at similar combos will help. Knowing Your N/A hp, and your top hp goal is important.
 
If you are going to run a turbo you can significantly improve the power output, the longevity, and the drivability of the car with EFI. I wouldn't trust a turbo motor to a carb. It can be done of course, but it is an exercise in patience.
