I'd like a concentrated set of recommendations and personal experiences on whether it's OK to simply "knock" the weights off.

Thanks.

Which weights? Are you talking about some balance weights on a cast-crank torque converter or flex plate or something like that & you're running a neutral balanced (and/or small rod) '69 440?

Yes, you can simply knock off the weights. They are on there pretty good, so you will likely need a chisel. I have done this numerous times with no ill effects.

Sure can and sure have tho I prefer to use a better converter behind even a smogged 440

I've done that too but mine wasn't perfect. May need to grind the welds down smooth too? Why not just stick in a new converter? Stockers or near stock ain't very expensive....
