i kinda had the same problem on my built 440 in my 73 challenger , would get to 200+ temps only on highway at 3k + rpms , though the weather in Qatar is 110+ , never puked over and yea, just kept driving her making sure she does not reach 220, daily driver for the past 3 years and not a problem
i have exactly the same problem but the weather here in Qatar is just insane , 115f but yea - if the engine temps come down when off the highway and at low rpms i wouldn't worry about it ... depending on what the weather there is 220-230 isn't overheating if engine temp comes down at lower...
