I work for a company that molds urethane. And i prefer real rubber that doesn't disintegrate or crack or turn into goo. I'd only use urethane on suspension parts like sway bar end links and bump stops that do not twist. Just my opinion.

The 70 a/c system under the hood is the better set up. As both lines to the compressor are on the passenger side. Which allows you to easily move the compressor over, and lay it on the fender without disconnecting any freon lines to work on the engine. that was my experience. Back in the day...
I put a 70 hurst shifter mechanism in my 69.
The linkage below the shifter pivot is 1" longer to create a shorter throw. I also modified a shifter mechanism by cutting the levers and welded in some metal to lengthen them 1" longer for my van. Its still holding up without any problems so far...

I'd keep the headers if they don't leak. Get rid of the electric fans, the noise is horrible. Get all new refrigerant lines and a modern compressor.

The poor guy had his shop heater malfunction during freezing temperatures and i believe 3 of his cars had the engine blocks crack. Does anyone here trust their climate controlled shop or garage not to run antifreeze/coolant in your vehicles ?
