It is good to get that thermo temp gun and check against your cars gauge.
You will then know at what point on the gauge is what temp.
All the things posted are good to check over. It is also possible you have another small problem. After the pump and thermostat swap that sounds like needed...

My brother has been mixing Av fuel with 93 no alky prem . 50/50 ,
He has a high compression engine, dome pistons, with open chamber eddy heads. No issues , it's going on 2 summers now.
Damn thing smells good when running even if it's a cheb. Lol
Once you advance you will need to reset your idle speed , it will rise with advancing.
All things considered, if it's running fine once it's warmed up you may want to run it as is for awhile , pull the plugs then and check how it's burning.
I would leave the headers on and keep the 150 nitrous set up for one of your other cars.
Changing the starter someday on a mopar B or Rb with full length headers is a right of passage.
It has to be done in a gravel drive on a hot day with no one to fetch tools.
Yes to advance you twist counter clockwise , to get another 5 degrees or so I don't think you will hit the coil.
Roughly 1/4 " mabey 3/8 should be plenty.
Yes 5 degree , like allready posted advance it between 5 to 10 and see how it runs once you get a light.
Clean around the distributor base with some brake clean ect.
Make a referance mark with a marker or chalk before moving timing.
You can not really get a good adjustment on the air fuel...
If the temp is coming up at road speed I agree on the air flow or lack of.
