I would book some time on a drive on dyno. Find out what RPM that 340 starts to fall off. It may turn more RPMs but after the nose over your just making noise.
Also use that time to play with timing and carb getting.

Another vote for cork on a stamped steel cover. I use a thin line of weather strip adhesive on the clean and straight cover flange.
Wipe the head edge with some brake clean on rag. Put them on, tighten down with 1/4" rachet or nut driver.

I did cut the passenger side on my 67 and installed a 26" , drilled a couple new holes and used 1/4 " J nuts on the new holes.

What I will add is with the smaller dia. tire you are useing the 3:21 / 3:23 gearing is were I would shoot for for hyw. use.
I run a 26.5 dia rear tire with 3:23s that puts my rpms at 2,800 at 65mph.
