At least you have a nice shop to build your own parts! I put the usct stuff in my car too. This is where mine sit at 2° in a 1969 GTX with a reilly motorsports front suspension. The TTI header collector reducers fit through with no problems at all.
I'm also attempting this swap in a 69 GTX. I feel your pain!! My factory 2 speed wiper motor isn't even close to clearing and I hear, like you, the 3 speed motor doesn't work without remodeling the firewall. What chinese 2 speed did you go with and what did you have to do to change the linkage?
I had a similar issue with mine and the harmonic balancer actually separated a bit and was rubbing on the timing cover causing a high pitched metal on metal squeal
Edelbrock quiet flow is not quiet. I changed from a magna fuel to edelbrock years ago thinking the same thing. Just as loud. Finally changed to a tank from tanksinc.com and an in tank walboro pump. Whisper quiet now.

I am interested in your center AC vent. How does the center vent mount to the center bezel and to the dash? I have a non AC car that I'm trying to convert and can't find any info on how everything mounts up.
