If you’re running a divorced choke, blocking the crossover could be a problem. With an electric choke or no choke at all, I don’t see a problem. I have no choke and a blocked crossover, cold idle is a little erratic but drivability improves and the idle is fine within a couple blocks.

The Holley throttle adapter will move the stud higher which resin a longer arc of travel, I wouldn’t attempt to make any further adjustments until the adapter is installed.

I would leave the intake gasket as is and disable the choke. For a fair weather cruiser I don’t think a choke is a necessity.
