Look at it this way, it is worth more than what you can get for it. I f you need a big block engine and transmission one day,you have them. If you need an 8 3/4 rear end,you have one. Driveshaft,gotcha.
You may find a nice car one day that needs a drive train,or a small block car you want to put...
Get as crazy as you want with a different block and heads.
You could redo yours with an upgraded cam and some ported 440 source heads painted to look stock also.
Your car and your money so do as you wish but I would protect the original block and heads if it were mine.

Single plane all the way. Victor,Trick flow,etc should be high on the list. If hood clearance is an issue then the M1 or street dominator may give up some hp but will still perform well.
9 out of 10 times I would say go for the 4 barrel. This may be the time I say try it. You can get a 500 with elec choke also if that interests you. Make sure it opens freely and fully on your 2 barrel intake. It should be an improvement over the factory setup. If you still want a 4 barrel later...

I have an 8.25 Rear end with what I suspect(yet to confirm) are 2.45 gears,Will I be able to install lower gears in this carrier ? I can't remember if say a 2.76 or lower gear will directly interchange?

Other variables such as exhaust,gear ratio,timing,and intake/carburetor may dictate the "usable" upper rpm limit.
RJS nailed it (IMO)for shifting at 5500 and see whether it is still pulling or leveling off.
Just a guess but if everything else is well matched I could see it liking a 5800 to...
