I did the "Sport" level last time I sent one in, only a very slight difference in firmness from stock, wish I had gone with Modern but that is personal preference.
If proper hangars are in place, it's just something that happens with worn out or shitty springs or springs with too much arch (even new ones can be shitty). You've already figured out to pop the shackle back in place with a prybar (I used to keep a big screwdriver in the trunk, just for that...
I'll add that in my experience changing the ride height without a re-alignment didn't cause the car to handle noticeably differently, but when left that way for long enough did show uneven wear on the front tires. I'd say watch out for that especially if going after (yikes) 3 inches...
The rust *could* likely be machined out, but after seeing the last two pics in your post....I don't know why you'd even consider it. Don't be cheap especially when it comes to your safety. Just do it right. The internet "just run it" guys won't be the ones fixing your car or retrieving your body...

It's 60s tech vs. modern day. Today the standard is rack and pinion and we also have better power-assist components.
Chrysler's old power steering is famous for "over-assisting" to the point of very light steering feel at speed.
Rack and pinion is just a completely different (and superior)...
You should shoot them an email to confirm, but my Right Stuff kit (manual 11" disc) was based on the '73 Dart. That's the make/model I've used to get replacement parts.

That's what I did years ago as well. Local hydraulic/O-ring supply place sold me a bag of 20 or so of the ones I needed for like $10 (and only because they had a $10 minimum!)

"Proportioning valve all the way open" is not a good thing....it should be partially or mostly closed to limit the fluid to the rears as they *should* lock faster than the discs.
