Hi volume fuel pumps often have a much stiffer return spring which can and will wear the stock pump pushrod out very quickly and/or the lobe on the cam.
Im afraid that you have too much gear and converter for a street 493. Its likely to spin too much and go through its usable power band too quickly.I base this on my friends similar 505 where he ended up replacing his 4.10 gear with a 3.55 which works much better. Your torque will be so high that...
if you run a high volume pump..... a better than stock hardened pushrod is required. otherwise the stiffer spring in the hv pump will wear down the pump pushrod fairly quickly.

i learned the hard way that fuel pressure actually drops as underhood temp goes up. just the opposite of what i had thought it would do.
years ago i learned this with my nos system. i had a safety pressure switch to shut the solenoids off if fuel pressure dropped below 5 psi.

holley made a spread bore 800 cfm double pumper which would be better than a thermo quad because tuning parts are far easier to get and it wold have more tuning options also i.m.o. . somewhat rare i think, but you could find one with some effort and patience. another possibility is the old holly...
if you have a high volume mechanical fuel pump and a stock fuel pump pushrod.....its very likely that the pushrod has worn short due to being too soft for the stiffer spring in the hv fuel pump. a harder/better pump pushrod can be had from several sources. could be your problem. good luck.
i was shocked to learn something the hard way about fuel pressure in case you all dont already know........as under hood temperature increases,fuel pressure actually decreases.so if you set your regulator at say 5 psi with the hood open when its 75 degrees outside,pressure might drop down to 3...
if its not the choke or the fuel pressure......perhaps you need an insulated spacer underneath your carburetor? iv seen carbs absorb so much heat from the intake manifold that a person could not hold their hand on the carb. that condition will cause surging and stalling. good luck.
had that problem twice over the years. both times the engine was not hurt,nor was the camshaft.
definetly change the oil and filter. get a hardened pushrod and should be good.
too bad they dont give any warning with the h.v. pumps.
with any near stock engine....the h.v. pump isnt necessary...
maybe you have an intermiten vacuum leak? once i had a cracked grommet at the brake booster. hitting a bump in the road would jiggle the brake vacuum hose causing the grommet on the booster to leak. that sudden vacuum leak would cause both power valves on my 850 holley to open which would stall...
