You need to find out what is going away to make it shut off. Spark, fuel, too much fuel and flooding out. Check the choke. Isnthat working? Or does it stay closed. When it shuts off and will not start is when you need to check for spark and fuel delivery. Hopefully that wi give you and idea
You just need to have some kind of vent. Whether you have a canister or vent to atmosphere is up to you. More important is having the tank vented so it does not create a vacuum when temps drop and the gas cools off. Your tank will implode

Some pictures of what you have going on would help. Sounds like theren is some major rot if the spring is poking through into the trunk. I can tell you right now 125 isnt even close. Neither is 400. If you have some welding experience, I think its time for some more. Does it need frame rails?
Or hook it up the way its supposed to be hooked up.

You can disconnect it but you will see that the speedometer cable goes through it. You will need a different cable.
Lean burn is the ignition system. The computer mounts on the air cleaner and the distributor is specific to the system. The mopar electronic conversion kit has instructions for replacing leanburn and would probably be the most practical way to go about it in this instance.
No return line. Vent line that should run to the vapor canister. Not sure about the 2 fuel lines. Some pictures may help. Not sure why the lean burn is preventing you from replacing the fuel pump. You should do yourself a favor and remove it anyway
I have heard the e58 360 blocks have a higher nickel content in the block. Some guy told me that years ago when i had my super coupe. Dont know if its true or not.
