It's much easier to install the dash pad before the dash is installed and a real PITA to do when the dash is in, but it can be done.
I'm not sure on a 65, but 66-67 console brackets are different between an automatic and 4-speed.
The post car is structurally stronger and has a very slight advantage in weight distribution. When you add frame connectors you add weight, but eliminate some body flex. I wouldn't race a convertible without frame connectors and the advantage would be in weight distribution if you are allowed to...
