If its a 68 Dodge, then the original color was most likely green. It seems most late 60's and early 70's Dodges were painted green.
If you aren't convinced, check the fender tag, or look in hidden areas as others have suggested.

Yes, that GTX in the pics is the 67 bright blue color. It is the brightest blue that was available in 67, and was available on A and B bodies. An almost identical color was available on C-bodies, but I think it was just called Medium Blue metallic for c-Bodies.

Nice 69 Charger. As for the Sherriff's car, I noticed the stripe on the back looks like a cross between a 70 Cuda hockey stick stripe, a bumble bee stripe and maybe a little strobe stripe from an AARCuda thrown in. Did your county's police cars always have stripes like that?

66-67 interior rear quarters are the same on B-body Plymouth and Dodge convertibles. Only the small section of upholstery differs.
68-70 B-body convertible interior rear quarters are shared between those model years but won't fit on a 66-67 B-body convertible.
Another clue is that the blue interior door panel seen in the photos of the rusty floor, is a blue door panel that was used on the 70 Satellite and Road Runner, but not on the Sport Satellite.
The 1970 Satellite convertible was available with everything from a slant six to the 383 4bbl. (no 440 and no Hemi available). Big blocks would be rare though.
