    Dynamat or ?

Peel N Seal I used to use it when I did car audio. It's cheaper than the others. Installs best when it's warm.

Dynamat / sound deadener, or Line-X? - pros and cons?

When I was doing car audio installs, we would use Peel & Seal for sound deadening. It is like Dynomat but a lot cheaper.

    Light weight sound/heat underlay

We used Peel n seal from Lowe's when doing car audio. Lots cheaper than Dynamat. Does the same thing. It needs to be warm to get good layout with it tho. I'm sure there's lots of others out there. We tried some other stuff that didn't stick very well. It was ordered online, very cheap stuff.

You really don't need that wire. The lights on the radio will still light up. The illumination wire is for connecting to the dimmer. It should dim the radio with the dash. I'd just let it be and not hook it up. I've rarely ever used the illumination wire with my installs.
