Yes 17" is the sweet spot, 15" exists mainly for spec Miata and small momentum cars like it so you will be limited on section width for rear tires on a high horsepower car.
My favorite track day tire (road course) is the Toyo R1R, it is 200 tread wear so can run on the street. The Toyo RR is like the Hoosier r7. Toyo has several 15" options.
I ran 255 on 17x8 with 67 GTX stock spring location. The 7" rim may pinch and distort the side wall where it may rub. an 8" rim fits the 255 tire width better. Need to run the 8"

I would just replace the stock 10" parts including shoes. With a front brake conversion to disc there is less of a need to upgrade the back. Be careful of where you get your 10" brake parts. I got mine from classic and ended up with bad parts, had to re-use the retainer spring on both sides...
those look proper. If you stuff a 295 on an 8" wheel you will not have a 295mm wide contact patch. I have a 275 on an 8" and it is as wide as my 255's on an 8". You lose width in the bulged sidewalls.
I would go with 17" black steels in the back and 15" up front. 17" gives you the ability to run wide modern sticky tires like Toyo r1r. 15's look better on the front and you can still get tires like the r1r in a 235 wide 15" tire. That's how I am going.
