Years back I tried a number of times to use adapter plates because of lack of funds. At least 90% of the time it didn't work out well. You'll likely have trouble getting a good seal around the secondaries and hood clearance might be a problem/

Most decent rebuild kits include a chart with settings by year, model or similar differentiators. That's a good place to start. Make sure the plunger is in good shape and not shrunk away from the wall of the fuel well. Ethanol can kill a new plunger pretty quickly if it's not ethanol compatible...
The carb looks to be very nicely finished. The vacuum canister has been changed to a later model unit. I wouldn't be afraid of it. The secondary metering block gives you more flexibility in fine tuning things.

As an aside, I've seen coils that will jump a spark plug in the atmosphere but won't fire under compression. You said the coil had been replaced though. This sounds almost like a cracked distributor cap.
Good write up. I'd done the same thing for my 360/Thermoquad plow truck. Sure made starting on bitter cold mornings a lot easier. Has worked without issue for 8 years now.
