i process my own. processors down here are bad about giving you someone elses deer.

Me too! Finally learned that my hunting stand needs a full rail around it with a curtain so they can't see me fidgeting Both my wife and I each use one of the stand shown below, so we can turn in the chair and not be seen if we move!

I use a tripod and an enclosure like yours with a swivel chair just have to make sure it doesnt make any noise

Try this.....
Boneless venison steak. Backstrap is best. Pound it out to 1/2 inch or less.
Cook mushrooms in butter (or onions or both). Set aside.
Flour steak and sear on high heat in same pan as mushrooms. Cook no more than MEDIUM. Medium-rare is best.
Wrap in foil an set aside.
Pour red wine (1 cup) in pan and cook down until thickens. Can add a little corn starch or flour to help thicken.
Added venison and mushrooms to pan just to warm it. You can slice steak prior to adding or not.
Simple and Amazing. I have shared with many of the "EWWWWW venison" crowd. Mind changer.
