I have a 383 that came with the car. Though the car is a 383 car, unfortunately it is not numbers matching. I am planning to rebuild the 383 and the 4 speed tranny.
I really wanted to go back black on the car since its what it was originally. It would take a ton of work to get it straight enough for black. I am still deciding.
Optimally, I would do black with black interior.

The thing I am most proud of is the rear window seal. As you are aware, the rear window seals in the corners just get eat up with rust. I could almost stick three fingers through some of the holes. I had one of the best body men in the state of NC custom fabricate replacements. You cant even tell its not original. I did; however, pay for it.. haha.. alot. Enough to cry.
the black would be awsome! yeah the numbers matching would be nice, but now you can do it your way and not worry about hurting an original engine. My back window channel was the one place I was worried about on mine,but only the corners were bad.
If you go black you won't have to worry about painting the suspension etc. separate since everything is primed. The door strikers are left natural though. My concern would be that if it will be awhile until final paint, will you have to scuff all those components to insure good adhesion?
I have thought about a 440 6-pack and seriously thinking it right now. Considering buying a crate motor would be cheaper than rebuilding the 383 I have.
