Putting a stroker together and I want to know if anyone out there has had to adjust the bends in the oil pickup to clear the windage tray and make oil pan clearance

I would clearance the tray to fit the pickup.
Now on the pan, have you tried slightly adjusting angle first.
Bending them is not fun, and make sure there's no pressure on the threads.

Yes.
Actually made a custom 1/2" pickup for the Chargers 400 / 500" stroker that has the BCR Main caps and 1/2 thick girdle.
On several others I just heated up the tube and re-bent the tube.
I think on the Trick Flow headed 440/505" stroker, the oil pan was a Jegs or Summit brand, and had no pickup. I think I used a 440 Source 1/2" pickup, and it was a bit too long, and I cut about an inch or so out of the tube and TIG welded back together.
