I'm hoping to find someone that can tell me by reading my 1974 Dodge Charger broadcast sheet if my car came from the factory with the moulding down the side to prevent car door dings and if the car came with pinstripes.

Kinda hard to read that report.
Very small.

Sweet car, though I really like the way silver and black 73/74 SE cars look.
 
Unless Chrysler used different nomenclature from standard, I don't believe that the side impact moulding is called a belt moulding; usually the 'belt moulding' is, as I understand it, the moulding at the top of the door panel between the sheetmetal and the window fuzzy.
Normally the mouldings you have circled are called 'side impact mouldings' or similar. Whilst an option on many cars in teh 70s, most were dealer installed as far as I know. NOT and expert on 74 Chargers - or much of anything else quite frankly - so my opinion is worth what it cost you...but I think its accurate.

Also, as far as my understanding goes on this generation, the M31 code includes the chrome trim moulding that runs across the back edge of the hood.

V5X, not on your list, would be:

Moldings (sic)
Body Side, Vinyl-Black with Bright Accent (Not available with Rallye Package)

Also, the V5X would have been a no cost option with the V78 stripe delete.
