Nice, the distillation process is based on the theory of boiling point temperature. Ethanol suspended in water has a boiling point of 172F. Water, as we all know, has a boiling point of 212F. The temperature differential between the two liquids allows for distillation. Once the distillation device pictured above, reaches 172F the ethanol turn to a vapor. This vapor makes it's way through various components of the distillation device, thumper and condenser. Once the ethanol vapor reaches the condenser the real magic happens.
