Thanksgiving has started, 5am and I am ready for a nap already! pics...

I know how you guys love my lengthy posts, so since I am sitting here watching my turkey cook, I would make one up for you guys...

Well yesterday me and my sons went and got our turkey, every year we go and pick out a fresh turkey, then pick it up all plucked and packaged. After we did our rounds and got home yesterday I deboned it and a 12lb ish chicken, I made my stuffing, brine, and put it all in the refer for this morning.

This morning I woke up around 3am so I could get a workout in (normally gym at 4:30ish), after a mild gym session,( I went easy, we have almost 10 house guests right now and my gym is right next to our guest suite) I lit up the kitchen and went to work. I stuff my boneless bird (all boned except for the drumsticks and wings) with sausage, stuffing, and the whole chicken, then stitch it all back up. Takes about an hour since I have done it a bunch of times now, actually make a roast chicken this way for fourth of july, except I use a a chicken and stuff it with a pork cut, bbq sauce, no stuffing, just bacon, onions, garlic, and veggies, slow smoke it for about 10 hours and it comes insane!!!

So anyway back to the birds, I weighed it after it was all done and she weighs 36.8#s, now keep in mind that is ALL meat, except for the wings and drumsticks!!!! I will have about 40 people here this year, I also have an 16lb and an 10lb pair of boneless, trimmed and tied Prime ribs (I always cook 2 one rare and one medium), so it should be plenty of food. The ribs are in an oven at 250 and the turkey is in an oven at 300 (Ill adjust that as the day goes on depending on how its cooking)... I still have 2 more ovens one is going to have bread in it (Ill make the dough around 10:30) so the bread is hot when we are ready to eat, and the last oven will be for everything else... I'll add more pics as the day goes on..

Good work there Seventy, this year we are have 22 people, many missing due to going to other side of their families but anyway its not at our place this year, at my cousin's place. The way we do it is easy for everyone, everybody brings a dish and whoever's house it's at only cooks the bird. I am going over in a bit to help set up, it's always a good day.
We are Italian so the amount of food is stupid, we keep saying "not so much next year" ha it's always more.

Looks like just 3 of us this year instead of the normal 9-12. That's ok, we're ready for an easy holiday season lol

R/C- racheal ray used to be so smoking hot, if you ever had her at your house and didnt shoot me a heads up, I would never forgive you, lol, I wouldn't waste her time cooking, I can have a pizza delivered anytime...


Gitex- head on over, figure the bird will be rite by 2-3ish...

Cranky- I will enjoy the holidays just as much when its just me, my wife and the kids, simple, intimate, and quiet... someday, lol. for now, we entertain and invite as much as we can, after the kids move on with their lives, I am going to sell this house and we are going to live in the lake house full time, since that is much smaller (just over 2k sq'), I dont think we could entertain 40+ people in the winter months...

well time to go baste the bird again, happy thanksgiving guys...

Sorry it took so long, I snapped a picture before we tore into it, here it is... (can you see what I added, lol???) out of everyone the bird sat out on the table for about 35 minutes before we carved it only 2 people noticed, lol...

we had a good day, I AM HAPPY ITS OVER, we have a bunch of left overs, so if anyone wants to stop by for turkey sammiches you are welcome to, I have been up since 3 so I am ready for bed, my wife promised me a back rub, I just got out of the shower she is "tucking in" our guests that are staying with us, everyone else had gone home, it was an early night, only 8pm and I am spent... I am getting to old for this stuff..

I hope all of your days were memorable, my niece did our blessing, it was adorable, my uncle drank too much whiskey and got in the wrong car in the driveway, fell asleep in the passenger seat of his sons car, in his defense 2 years ago he did own that car, he gave it to him, lol... But we were looking everywhere for him and he was just in the wrong car, lol... Besides that, another one in the books, good night, all, and g#d bless..
 
No one noticed the extra wings? I debone the chicken that is stuffed in the turkey and its not worth deboning the wings so I ussually just dip them in sriracha and honey then throw them on a pan in the oven for who ever gets them first, but I had no room left in the ovens so I stuck them on the bird... Its funny how so many people walked by it all cooked yesterday and didnt even notice, lol...
 
I saw them but didn't want to spoil it for anyone else i.e. give it away
