I know how you guys love my lengthy posts, so since I am sitting here watching my turkey cook, I would make one up for you guys...
Well yesterday me and my sons went and got our turkey, every year we go and pick out a fresh turkey, then pick it up all plucked and packaged. After we did our rounds and got home yesterday I deboned it and a 12lb ish chicken, I made my stuffing, brine, and put it all in the refer for this morning.
This morning I woke up around 3am so I could get a workout in (normally gym at 4:30ish), after a mild gym session,( I went easy, we have almost 10 house guests right now and my gym is right next to our guest suite) I lit up the kitchen and went to work. I stuff my boneless bird (all boned except for the drumsticks and wings) with sausage, stuffing, and the whole chicken, then stitch it all back up. Takes about an hour since I have done it a bunch of times now, actually make a roast chicken this way for fourth of july, except I use a a chicken and stuff it with a pork cut, bbq sauce, no stuffing, just bacon, onions, garlic, and veggies, slow smoke it for about 10 hours and it comes insane!!!
So anyway back to the birds, I weighed it after it was all done and she weighs 36.8#s, now keep in mind that is ALL meat, except for the wings and drumsticks!!!! I will have about 40 people here this year, I also have an 16lb and an 10lb pair of boneless, trimmed and tied Prime ribs (I always cook 2 one rare and one medium), so it should be plenty of food. The ribs are in an oven at 250 and the turkey is in an oven at 300 (Ill adjust that as the day goes on depending on how its cooking)... I still have 2 more ovens one is going to have bread in it (Ill make the dough around 10:30) so the bread is hot when we are ready to eat, and the last oven will be for everything else... I'll add more pics as the day goes on..
